Chocolate Chip Apple Cake



INGREDIENTS
1 cup butter, softened
2 cups white sugar
3 eggs
1/2 cup water
1 tablespoon vanilla extract
2 1/2 cups all-purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 cups apples - peeled, cored and finely diced
1 cup semisweet chocolate chips


DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C). Grease and flour one 9 or 10 inch tube pan.
In a large bowl cream the butter or margarine with the sugar. Beat in the eggs then add the water and the vanilla.
Stir the flour, cocoa, baking soda, ground cinnamon and ground nutmeg together. Beat this mixture into the creamed mixture. Stir in the chopped apples and the semisweet chocolate chips. Pour the batter into the prepared pan.
Bake at 325 degrees F (165 degrees C) for 1 hour and 15 minutes or until the cake tests done when a toothpick is inserted near the center. Transfer to a rack to cool. Makes about 16 servings.

axa: Kek ni sangat sedap. Cuma kalau ikut sukatan kat atas ni..kek ni tak la manis sangat. Kalau saper suka manis..tambahkan sikit gulanya. Why dia buat tak manis sebab bila kita gigit apple dan chocolate chip..baru kite akan rasa manis. Texture kek ni pun cantik dan moist jugak.

Blueberry Moist Cake


INGREDIENTS:
1/2 cup butter
1/2 cup white sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
2 egg yolks
1 1/2 cups all-purpose flour
1 teaspoon baking powder 1/3 cup milk
2 egg whites
1/4 cup white sugar
1 1/2 cups fresh blueberries
1 tablespoon all-purpose flour
1 tablespoon white sugar

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
2. Cream butter or margarine and 1/2 cup sugar until fluffy. Add salt and vanilla. Separate eggs and reserve the whites. Add egg yolks to the sugar mixture; beat until creamy.
3. Combine 1 1/2 cups flour and baking powder; add alternately with milk to egg yolk mixture. Coat berries with 1 tablespoon flour and add to batter.
4. In a separate bowl, beat whites until soft peaks form. Add 1/4 cup of sugar, 1 tablespoon at a time, and beat until stiff peaks form. Fold egg whites into batter. Pour into prepared pan. Sprinkle top with remaining 1 tablespoon sugar.
5. Bake for 50 minutes, or until cake tests done.

Axa : Kek ni sangat sedap. Ni first try axa. Alhamdulillah menjadi. Favourite ayah aszra. Axa letakkan blueberry filling as topping utk tambah kan lagi kelazatan kek ni. Kalau tak jumpa fresh blueberry pun tak apa...sebab blueberry filling tu pun boleh ..cuma kena gaulkan dengan tepung gandum la sebelum masukkan ke dalam adunan.
